Recipe(tried): Grace: Buffet Potatoes

I think it would need more liquid to use raw potatoes. I have seen several versions of this recipe and all call for cooked potatoes. If you want to use raw, how about using one of the recipes that uses frozen hashbrowns and using your potatoes, grated coarsely. A search on this site should turn up a lot of them. I will give you a recipe for a potato dish we like but it is not as rich. This came from my favorite Aunt who always made everything taste wonderful. Hope you get all the potatoes dug before the ground freezes!

Buffet Potatoes

4 mediun baking potatoes
3 T. butter or margarine
salt, pepper, chopped parsley
1/2 cup grated american cheese
1/2 cup light cream, half and half, or evaporated milk.

Cut potatoes into strips as for french fries. Mound them on a large sheet of heavy duty aluminum foil. If you don't have heavy duty, use 2 sheets of regular. Dot with the butter, and sprinkle with salt and pepper, parsley and cheese. Pour the cream over it and bring up the edges of the foil to form a loose package, seal all the edges. Place the sealed package on a 11 by 7 or 9 by 13 baking pan and bake in a 425* F. oven for about 50 minutes. Makes 4 servings.
