Recipe: Banana Caramel Bars (using caramel topping)

BANANA CARAMEL BARS

2 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 cup margarine, cubed
1 large egg, beaten
3 medium extra-ripe bananas, peeled
3/4 cup caramel ice cream topping

Combine flour, sugar and baking powder in a bowl. Cut in margarine with pastry blender until mixture resembles coarse meal. Slowly stir in egg, mixing with a fork until crumbly. Pat half of mixture in 13x9-inch baking pan to form crust.

Blend bananas in blender (1 cup). Stir together bananas with caramel topping. Pour over crust, spreading evenly. Sprinkle remaining crust mixture over filling. Pat gently.

Bake at 375 degrees F, 35 minutes, or until golden brown. Cool on wire rack. Cut into bars when cooled.

Makes 2 dozen bars
