I have made this many times and it was my Grandma's favorite quick cake to make. She made it until she was 99. I always keep a small can of Pet milk (used in the topping) in my cupboard to remind me of her.
LAZY DAISY CAKE
2 eggs
1 cup sugar
1 cup flour
1 tsp. baking powder
3 Tbsp. butter
1/2 cup milk
TOPPING:
1/2 cup coconut
5 heaping tbsp brown sugar
4 tbsp butter, softened
3 tbsp canned evaporated milk (Pet or Carnation)
CAKE:
Preheat oven to 350 degrees F. Grease an 8x8-inch baking pan.
Beat eggs until thick and lemon colored. Add sugar and dry ingredients.
Bring milk and butter to boiling point. Add to sugar mixture. Pour into prepared pan.
Bake at 350 for 20-30 minutes.
TOPPING:
Combine all ingredients for topping. Pour over cake as soon as it comes out of the oven and put under the broiler until lightly brown.
