WACKY CHOCOLATE CAKE
1 1/2 cups cake flour
1/4 cup cocoa
2 tbsp granulated sugar replacement (SPLENDA)
1 tsp baking soda
1/2 tsp salt
1 cup water
1/4 cup liquid shortening (or oil)
1 egg
1 tbsp white vinegar
1 tsp vanilla
Preheat oven to 375 degrees F.
Combine cake flour, cocoa, sugar replacement, baking soda and salt in sifter. Sift into large bowl, add remaining ingredients and beat to mix. Pour into 9-inch square baking dish.
Bake at 375 degrees F for 35-40 minutes, or until done.
TO COOK IN A MICROWAVE:
Cook on medium for 10-11 minutes, turning dish a quarter turn every 5 minutes.
