Recipe(tried): Grandma's Pasta Sicilia

One of my fondest memories of my grandmother is of her making this dish for us.
It combines pasta with peas and potatoes in a meatless tomato sauce. It's an
excellent light pasta dish which is great for summer suppers.

Grandma's Pasta Sicilia:

3-4 medium-size potatoes, chopped
1 yellow onion, chopped
1 T olive oil
1 small can tomato paste (you will use only 1/2 can)
1 large can chopped, peeled tomatoes (not stewed or seasoned)
1 large can tomato sauce
1 can peas
1 T parsley
2 T oregano
pepper (couple pinches)

Saute onion and potatoes in olive oil until onion is transparent.
Add 1/2 can tomato paste and stir for a minute. Add tomatoes and sauce and
spices. Bring up heat until almost boiling, stirring occasionally. Turn down heat
and simmer until potatoes are cooked - not crisp, not mushy. Keep stirring so
potatoes don't stick to bottom of pan. Add peas when potatoes are almost cooked.

Serve over shells, rotini okr spaghetti broken into small (2 inch long) pieces.
Top with grated parmesan or romano.

Serves 4-6
