Recipe: Whole Wheat Chocolate Chip Banana Bread (using oil, brown sugar and oats)

3 bananas, mashed
2 eggs, beaten
1/4 cup oil
1/2 cup brown sugar, packed
1 cup whole-wheat flour
1 cup quick-cooking oats, uncooked
1 tsp. baking soda
1 cup semi-sweet chocolate chips
Combine bananas, eggs, oil and brown sugar in a large bowl. Blend well with an electric mixer on medium speed. Add flour, oats and baking soda; beat just until dry ingredients are mixed in.
Stir in chocolate chips. Pour batter into a greased 9x5-inch loaf pan.
Bake at 350 degrees F for 55 to 60 minutes, until a toothpick inserted in the center tests clean. Remove bread from pan; cool completely on a wire rack.
Makes one (9x5-inch) loaf
