GRANDMA'S RAISIN CAKE
3 cups raisins
1 1/2 cups sugar
1/2 cup butter, softened
2 eggs
1 1/2 cups reserved raisin juice
1 teaspoon baking soda
3 cups flour
2 teaspoons ground cloves
2 teaspoons ground cinnamon
Nuts and candied cherries (optional)
Preheat oven to 350 degrees F. Grease a Bundt pan.
In a medium size pan add raisins and cover with water; bring just to a boil but do not boil. Remove pan from heat and let cool. Drain raisins, reserving 1 1/2 cups of the raisin juice/liquid.
Cream butter and sugar together. Add eggs, then raisins. Dissolve baking soda in the reserved raisin liquid; stir into sugar mixture. Add flour, cloves and cinnamon and mix well. If desired, stir in nuts and/or candied cherries. Pour mixture in a prepared pan.
Bake at 350 degrees F for one hour or until done.
Makes 1 Bundt cake
