Recipe(tried): Grecian Chicken Breasts Dinner, Twice Baked Sweet Potatoes with Apples, Orange Peel and Spices, Tomato Salad with Basil-Honey Vinaigrette, Strawberries and Cream
Menus Hey Everybody,
Looks like the warm weather is creeping back into the Sunshine State. Last week I took a chance that there were not going to be any more cold blasts coming through and cut down the Bleeding Heart, Bouganvillia, Heather, Lantana, Penta, and Mums. I bleached and washed the tiles in the entryway, threw away all the potted Christmas plants and now await Spring!!!
We haven't had Grecian Chicken in a while and it is the perfect Adkin's entree!! So that is what is on the menu tonight along with some really red, juicy strawberries I found at the market. Pretty soon we will be seeing the strawberry fields open. I can't wait for picking time!!

Grecian Chicken Breasts
serves 6
6 boneless, skinless chicken breasts, split
1 pkg. (10oz.) frozen chopped spinach, thawed
1 pkg. (8oz.) feta cheese, crumbled
1/2 cup mayonnaise
1 clove garlic, minced
1/4 cup flour
1/2 tsp. paprika
12 strips bacon
Preheat oven to 325. Cut a pocket into each breast, salt and pepper to taste and set aside.
Thoroughly drain and squeeze any liquid from the thawed spinach. Do not cook. Combine with feta cheese, mayonnaise, and garlic. Stuff into the pockets.
Combine the flour and paprika and lightly coat the stuffed chicken breasts. Wrap 2 strips of bacon around each breast and place on a baking sheet. Bake uncovered at 325. for 1 hour. Unbelievably delicious!!!
Twice Baked Sweet Potatoes with Apples, Orange Peel and Spices
2 servings
2 medium sweet potatoes
1T. brown sugar
2 T. butter
1/8 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. grated orange peel
1/3 c. dried cranberries
Oven at 350. Prick the potatoes all over to let out steam. Bake 55-65 minutes til fork tender. Cut thin lengthwise slice from the tops. Scoop out the insides and place the shells on a baking tray. Blend the insides, butter, spices and sugar in a bowl with a mixer. Stir in the dried cranberries by hand and fill the shells. Bake for another 20-25 minutes.
Tomato Salad with Basil-Honey Vinaigrette
Serves 6
4 tbsp. balsamico vinegar
1 tbsp. honey
1/2 tsp. salt
3/4 cup olive oil
1/2 cup chopped fresh basil leaves
3-4 tomatoes sliced and layered in serving platter
In a small bowl whisk together the vinaigrette, honey and salt. Add the olive oil and basil and whisk to blend. Taste and adjust seasonings. Drizzle over tomatoes and serve.
Strawberries & Cream
1 quart strawberries, washed hulled and sliced
whipped cream
Serve berries in dessert dishes topped with whipped cream.
