GREEN ENCHILADAS
Very good with cooked chicken added. Quite cheesey.
1 dozen corn tortillas
1/2 cup cooking oil
3 cups shredded Monterey Jack cheese, divided use
3/4 cup chopped onion
4 Tablespoons butter or margarine
1/4 cup flour
1 (14 1/2 ounce) can chicken broth
1 cup sour cream
1 (4 ounce) can diced green chiles
Preheat oven to 425 degrees F.
Soften tortillas in hot oil one at a time.
Place 3 Tablespoons of cheese and 1 Tablespoon of onion on each tortilla; roll up. Place seam side down in an 11x7 1/2x1 1/2-inch baking dish.
In a saucepan, melt butter or margarine; blend in flour. Add chicken broth all at once; cook and stir until mixture thickens and bubbles.
Stir in sour cream and green chiles. Heat through but do not boil. Pour over tortilla in baking dish.
Bake for 20 minutes.
Sprinkle remaining cheese over top, return to oven for 5 minutes or until cheese melts. Serve with additional sour cream and salsa.
