Recipe: Spiedie Marinade Recipes (from the Spiedie Festival in Binghamton, N.Y.)

"Some of the measurements are approximate, so let your taste buds be your guide. If you don't have a grill, I believe these can be cooked under the broiler, possibly in a grill pan or in a counter-top grill. Also, whisk the marinade ingredients together long enough to form an emulsion so the oil won't separate readily from the other ingredients."
TURKEY OR CHICKEN SPIEDIES:
Marinate chicken or turkey for 2 or 3 days in 1 cup oil, 1/2 cup cider vinegar, 1/2 cup wine vinegar, 1 tablespoon salt, 1/4 teaspoon pepper, 3 tablespoons poultry seasonings, a dash of oregano and some garlic, if you like. Put on skewers and cook over charcoal.
SPIEDIE MARINADE FOR CHICKEN, TURKEY, BEEF OR PORK:
Cut 4 to 5 pounds of meat into small cubes. Marinate, refrigerated, for 2 or 3 days, turning daily in: 2 cups oil, 1 cup wine vinegar, 1/4 cup Worcestershire sauce, 2 or more cloves of finely chopped garlic, 1/4 teaspoon sweet basil, 1/2 teaspoon oregano, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon red pepper, 2 teaspoons salt, 2 teaspoons pepper, 1/2 cup red wine.
MARINADE FOR POULTRY SPIEDIES:
For 5 pounds of meat, combine 1 egg, 1 cup olive oil, 2 cups vinegar, 1 can beer, 3 tablespoons salt, 1 tablespoon poultry seasoning, 1 teaspoon each cayenne pepper, black pepper and sage, 3 tablespoons chopped fresh mint leaves, 3 cloves garlic, 3 tablespoons fresh lemon balm chopped.
MARINADE FOR BEEF SPIEDIES:
For 3/4 pound beef cubes, combine 1 1/2 cups oil, 1/2 cup each cider vinegar and dry white wine, 3 tablespoons fresh lemon juice, 4 tablespoons Worcestershire sauce, 1/4 cup chopped fresh sweet basil, 4 cloves chopped garlic, 1/4 cup chopped Italian parsley, 3 tablespoons chopped fresh mint, salt and pepper.
MARINADE FOR PORK SPIEDIES:
For 4 pounds of pork cubes, combine 1 1/2 cups olive oil, 1/2 cup dry white wine, 1/2 cup white vinegar, juice of 1 lemon, 1 teaspoon seasoned salt, 1 teaspoon pepper, 5 cloves chopped garlic, 2 tablespoons chopped fresh mint, 3 tablespoons chopped fresh sweet basil, 2 tablespoons oil infused with oregano. Marinate for 3 or 4 days.
