Hey, Danigurl. If you have children, and if they are fussy eaters like mine were, here is an idea. I would take the leftover vegetables (I assume carrots, onions, celery) and puree them. Then add them to meatballs along with your bread crumbs. It's a good way to get veggies into your kids, to add flavor to the meatballs, and also to get the meatballs a little more tender.
