VEGETABLE-CHEESE CASSEROLE WITH PASTA
3 zucchini, sliced
1 cup sliced mushrooms
2 tablespoons butter
3 tomatoes, chopped
3 cups torn spinach leaves
Salt (to taste)
8 ounces pasta, cooked and drained (spiral, macaroni, egg noodles, spaghetti)
1 cup shredded Swiss cheese
1 cup shredded Cheddar cheese
Preheat oven to 350 degrees F.
In a large skillet, saute zucchini and mushrooms in butter until softened.
Add tomatoes, spinach, and salt. Simmer for 15 minutes.
Mix in cooked pasta. Place in 13x9-inch casserole and sprinkle cheeses on top.
Bake for 5 minutes, or until cheese is melted.
Servings: 4
