Recipe: Grilled Bourbon Salmon (using pineapple juice, brown sugar and soy sauce)

GRILLED BOURBON SALMON

1/4 cup pineapple juice
2 tablespoons soy sauce
2 tablespoons brown sugar
1 teaspoon bourbon
1/4 teaspoon fresh cracked pepper
1/8 teaspoon garlic powder
1/2 cup vegetable oil
1 pound salmon fillets

Combine all ingredients, except salmon, in a bowl.

Remove all skin from salmon. Place salmon in a glass dish, pour some marinade over it, reserving some for basting during grilling. Refrigerate at least 1 hour.

WHEN READY TO COOK:
Remove salmon from marinade and discard marinade.

Grill salmon over medium high heat, about 5-7 minutes per side, or until fish flakes; baste with reserved marinade.

Makes 4 servings
