Recipe: Grilled Bruschetta

GRILLED BRUSCHETTA

1/2 cup olive oil (or vegetable oil)
2 tablespoons chopped fresh basil leaves (or 2 teaspoons dried basil)
2 cloves garlic, crushed
1 baguette (1 pound), cut diagonally into 1-inch slices
Sliced Roma (plum) tomatoes, if desired

Brush grill rack with vegetable oil. Heat coals or gas grill.

Mix oil, basil and garlic. Brush or drizzle on cut sides of bread.

Grill bread uncovered 4 inches from medium heat 4 to 6 minutes, turning once, until golden brown. Top with sliced tomatoes, if desired.

VARIATION:
Spread grilled bread slices with goat cheese.

Makes 6 servings (3 slices each)
