CAMP MAPLE CHICKEN
2 (2 1/2 lb. each) broiling chickens, split, backbone and neck removed
1/2 cup melted butter
Salt and freshly ground black pepper
1/4 cup Camp Pure Maple Syrup
watercress or parsley (for garnish)
Preheat the broiler. Rub the rack of the broiler pan with melted butter.
Rub salt and freshly ground black pepper into both skin and bone sides of chicken. Combine remaining butter with CAMP Pure Maple Syrup and brush on chicken. Arrange chicken, bone side up, on rack.
Broil 4-inches from heat for 12-14 minutes basting once or twice with CAMP Pure Maple Syrup and butter mixture. Turn with tongs, brush skin side with CAMP and continue to broil, skin side up, brushing once or twice more with CAMP Pure Maple Syrup for 12-14 minutes. Test for doneness by piercing joint between thigh and body with the point of a knife. If juices are tinged with pink, but not red, the chicken is cooked. If red, cook a minute or two longer.
Arrange the chicken on a heated platter and garnish with watercress or parsley.
