GRILLED FRUIT KEBABS
1/2 fresh pineapple, peeled and cut into small wedges
2 bananas, peeled and cut into 4 pieces
6 apricots, halved and pitted
6 plums, halved and pitted
FOR THE MARINADE:
Zest (grated colored portion of peel) and juice of 2 oranges
Zest and juice of 1/2 lemon
3/4 cup granulated sugar
1/4 cup dark rum
1 teaspoon ground nutmeg
Non-stick cooking spray (for the grill rack)
wooden or bamboo skewers (soaked in water)
Place pineapple, bananas, apricots and plums in large bowl.
Combine citrus zest, juice, sugar, rum and nutmeg; stir into fruit mixture. Allow fruit and liquid to blend at room temperature for at least 30 minutes.
WHEN READY TO COOK:
Preheat grill to medium.
Drain fruit; reserve liquid. Thread fruit alternately on soaked wooden skewers.
Coat grill rack with non-stick spray, then place on grill. Place kebabs on grill rack; cook, uncovered, for about 10 minutes; brush occasionally with drained liquid. Turn skewers frequently.
Yield: 10 to 12 servings.
