Recipe: Grilled Turkey Half with Honey and Lemon Basting Sauce

GRILLED TURKEY HALF

"Grilled turkey is delicious, and preparing half a bird is really convenient. Your butcher can saw a frozen bird in half for you, or you can cut an unfrozen turkey in half with a large butcher knife. Remove the leg clamps before cooking."

4 to 5-lb. fresh or frozen turkey half, thawed
2 tablespoons chopped green onion
2 tablespoons honey
1 tablespoon oil
1 1/2 teaspoons lemon juice
1/2 teaspoon five spice powder
1/8 teaspoon garlic salt
1 tablespoon oil

MICROWAVE-TO-GRILL DIRECTIONS:
Prepare charcoal fire for grilling. Rinse turkey half; pat dry. Place skin side down in 12x8-inch (2-quart) microwave-safe baking dish; cover with microwave-safe plastic wrap. Microwave on HIGH for 10 minutes. Turn turkey skin side up; cover again with microwave-safe plastic wrap. Microwave on MEDIUM for 15 to 20 minutes or until outer edges of turkey begin to cook.

Meanwhile, in small bowl combine remaining ingredients except 1 tablespoon oil; set aside.

When charcoal fire is ready for grilling, place drip pan in center of grill; arrange coals around outside edge of drip pan.* Place grill rack 4 to 6 inches above drip pan and medium coals.

Skewer neck skin to back. Brush 1 tablespoon oil on cut side of turkey. Immediately place turkey half cut side down on grill rack directly over drip pan. Brush turkey with honey mixture. Cover grill.** Cook 30 to 45 minutes or until internal temperature is 170 degrees F, juices run clear and drumstick moves easily in socket, brushing occasionally with honey mixture.

TIPS:
*A purchased rectangular-shaped aluminum foil pan works well as a drip pan. Select a size that is slightly larger than the size of the turkey half.

**lf cooking on a grill without a cover, a tent of aluminum foil can be used to cover turkey

Insert meat thermometer into thickest part of breast muscle parallel to breast bone.
