Recipe: Ham and Sweet Potato Bake (using evaporated milk) (Carnation, 1974)

HAM AND SWEET POTATO BAKE

4 cups cooked, mashed sweet potatoes
3/4 cup undiluted Carnation Evaporated Milk
1/3 cup chopped onion
1 teaspoon salt
1/8 teaspoon crushed rosemary leaves
1/8 teaspoon pepper
1 pound ham slice (about 1/2 inch thick)
2 teaspoons dark corn syrup

Mix sweet potatoes, evaporated milk, onion, salt, rosemary, and pepper. Place mixture in 1 1/2-quart shallow casserole.

Cut fat from 1 pound ham slice (about 1/2 inch thick). Brown ham slice on both sides. Place over potatoes. Brush with 2 teaspoons dark corn syrup. Cover casserole with foil.

Bake in moderate oven (350 degrees F) 45 minutes. Serve at once.

Makes 4 servings
