Ham can be ground in a meat grinder or in small batches in a food processor or blender. Ham should be coarsely ground into pieces between one-eighth and one-fourth inch.
PEACH-SAUCED HAM BALLS
This recipe comes from the Pillsbury Classic Cookbook, Money Saving Meals.
4 cups (1 lb.) ground ham
1/3 cup dry bread crumbs
1 Tablespoon brown sugar
1/8 teaspoon cloves
1/2 cup milk
1 (29-ounce) can peach halves, drained, reserving 1/2 cup liquid
1/3 cup firmly packed brown sugar
1 Tablespoon prepared mustard
Heat oven to 350 degrees F. Lightly grease a 12x8-inch (2-qt.) baking dish. I
n large bowl, combine ham, bread crumbs, 1 Tablespoon brown sugar, cloves and milk mix well. Firmly press mixture into 8 balls*.
Cut a thin slice off rounded portion of each peach half to prevent tipping; arrange in greased dish indentation side up. Fill indentation of each peach half with ham ball.
In small bowl, combine reserved 1/2 cup peach liquid, 1/3 cup brown sugar and mustard; blend well. Pour evenly over ham balls.
Bake at 350 degrees F. for 30 to 45 minutes or until thoroughly heated.
To serve, spoon sauce over ham balls.
Makes 8 servings
TO PREPARE IN MICROWAVE:
In large bowl, combine ham, bread crumbs, 1 Tablespoon brown sugar, cloves and milk mix well. Firmly press mixture into 8 balls*.
Arrange in a microwave-safe 12x8-inch (2 qt.) baking dish; cover with waxed paper. Microwave on HIGH for 10 to 14 minutes or until hot, turning halfway through cooking. Remove ham balls; drain baking dish, if necessary.
Meanwhile, in small bowl, combine reserved 1/2 cup peach liquid, 1/3 cup brown sugar and mustard; blend well.
Cut a thin slice off rounded portion of each peach half to prevent tipping;arrange in greased dish indentation side up. Fill indentation of each peach half with ham ball. Pour sauce mixture evenly over ham balls; cover with waxed paper.
