Recipe(tried): Ham-Potato Pie...................

This is not the original recipe. I "added to it" using ham and cheese.

Ham, Potato, and Onion Pie

1 T. butter
1 1/2 cup thinly sliced onions
1 lb. new potatoes, scrubbed but not peeled, sliced thinly
3/4 tsp. salt
3/4 tsp. pepper
1 cup milk
1 1/2 cup sliced scallions or green onions
1 T. chopped garlic
1 1/2 cups chopped ham
1 cup cheddar cheese
2 pie shells, thawed

In a large skillet, heat the butter, add the onions and cook over medium heat
until onions are just limp. Add the potatoes, salt, pepper, and chopped
garlic. Cook 3 to 4 minutes, stirring often until potatoes are hot. Add milk,
reduce heat to medium-low, cover and simmer stirring at least once until
potatoes are tender and most of the milk is absorbed. Remove from heat, stir
in the scallions, ham, and cheese. Fill pie shells with filling and place in
preheated 350 degree oven, baking until golden brown. Cut into wedges to serve.

I served spring cabbage, sliced strawberries, and sweet tea with lemon with
this luscious pie!

We had one of these pies for supper and I froze the other. Supper is ready for
one night next week!
