Have you tried using mostly mayo, but thinning a little with rice milk? You'll also need to add a squeeze or two of lemon juice to provide the tartness that sour cream or buttermilk normally has. Basically, that's all the dairy products do...change the consistency and add a little bright/tart flavor.
