Recipe(tried): Ham, Swiss and Potato Frittata
Menus Tonight we had ham, swiss and potato fritta, flaky croissants, and a garden salad for dinner. The frittata was good. Next time, I may substitute asparagus for the red potatoes.
Ham, Swiss and Potato Frittata
8 oz ham, cut in 1/2 inch cubes
6 oz swiss cheese, cut in 1/2 inch cubes
2 small red potatoes, boiled, cooled and quartered
5 large eggs
2 Tbsp heavy cream
1/2 tsp salt
Ground black pepper to taste
Preheat oven to 350 degrees.
Spread ham, cheese and potatoes evenly on the bottom of a greased 9 inch pie pan.
In a bowl, place eggs, salt, pepper and cream. Whisk until very light and foamy, about 4 minutes.
Pour egg mixture over ham, cheese and potatoes. Bake for 25-30 minutes, or until the frittata puffs and cracks. Let cool for 10 minutes before serving.
