HAMBURGER CASSEROLE (topped with cheese)
1 1/2 lbs. lean ground beef
1 green pepper, chopped
1 onion, chopped
1 can tomatoes
1 (8 oz.) pkg. elbow macaroni
1 tbsp. ketchup
1 tbsp. Worcestershire sauce
1 cup grated cheddar cheese
Brown meat, pepper and onion. Pour off grease. In a blender add tomatoes and juice. Mix until smooth and add to meat. Add ketchup and Worcestershire sauce. Simmer 30 minutes. Cook macaroni; drain and rinse. Mix macaroni and soup with meat sauce. Pour into a casserole dish. Top with grated cheese. Bake, uncovered at 350 degrees for 30 minutes. Serve with a tossed salad.
CRUNCH BEEF BAKE CASSEROLE
1 (7 oz.) pkg. elbow macaroni (2 cups cooked)
1 lb. ground beef
1 can cream of mushroom soup
1 (14 1/2 oz.) can whole tomatoes, cut up
3/4 cup shredded Cheddar cheese
1/4 cup chopped green bell pepper
3/4 tsp. seasoned salt
1 tsp. instant beef bouillon
1 (3 oz.) can Durkee French fried onions, divided use (optional)
Prepare macaroni as directed on box.
Brown ground beef and drain.
Combine all ingredients except onions. Pour half of mixture into 2-quart casserole. Add 1/2 can onions evenly over mixture. Add remaining beef and macaroni mixture.
Cover and bake at 350 degrees F 30 minutes. Remove from oven and top with remaining onions. Continue baking, uncovered, 5 minutes longer.

There are so many variations of this casserole, but here are two for you to try. The second has cream of mushroom soup and French fried onions - you can omit the onions and add cheese on top for the last 5 minutes of baking.
