TANGY TAMALE PIE
FOR THE CORNMEAL MIXTURE:
2 1/2 cups water
1 1/2 tsp. salt, divided use
1 tsp. plus 1 to 2 tbsp. chili powder, divided use
1 1/4 cups Albers cornmeal
FOR THE FILLING:
1 lb. ground beef
1/2 cup chopped onion
1 tsp. oil
1/2 cup ripe olives, sliced
2 cups stewed tomatoes
1/2 cup whole kernel corn
1/2 tsp. garlic salt
1 cup cheddar cheese, divided use
TO PREPARE THE CORNMEAL MIXTURE:
Combine 2 1/2 cups water with 1 teaspoon salt and 1 teaspoon chili powder and cornmeal. Cook over medium heat, stirring constantly. When thickened line the sides and bottom of a 10 x 6 x 2 inch baking dish with about 2/3 of the cornmeal mixture.
TO PREPARE THE FILLING:
While the cornmeal mixture is cooking, brown beef and onion in oil in frying pan. Drain fat. Add olives, the remaining 1 to 2 tablespoons chili powder, tomatoes, corn, the remaining 1/2 teaspoon salt, and garlic salt, and 1/2 cup of the cheese.
Pour the filling over cornmeal mixture in baking pan. Spoon remaining cornmeal mixture on top. Sprinkle with the remaining 1/2 cup cheese.
Bake at 350 degrees for 45 minutes.
VARIATION:
You can also add 1 can seasoned green beans, drained to the filling.
