Recipe: Hearty Oatmeal Pecan Waffles

Breakfast and Brunch
HEARTY OATMEAL PECAN WAFFLES

1 1/2 cups sifted whole wheat flour
2 tsp baking powder
1/2 tsp salt
2 eggs, room temperature, beaten
2 cups milk or reduced fat or skim milk
1/4 cup butter or margarine, melted
2 tbsp honey
1 cup quick-cooking rolled oats
1 cup finely chopped pecans
additional warm melted butter (optional) and/or warm maple or maple-flavored syrup or other flavored syrup or favorite fruit preserves.

Sift together the first 3 ingredients into a medium bowl. Add eggs, milk, 1/4 cup melted butter and honey, mixing only enough to moisten dry ingredients. Stir in rolled oats and pecans.

Spoon enough batter onto greased preheated waffle iron to fill iron (do no overfill as batter will overflow during baking process).

Bake until iron stops steaming, about 5 minutes, and waffles are lightly browned.

Serve hot accompanied with warm melted butter and/or warm maple syrup or whatever you choose.
