HEAVENLY CHOCOLATE PIE
2 cups milk
4 Tbsp. butter
3/4 cup Ghirardelli Ground Chocolate
1/4 cup sugar
1/4 cup cornstarch
Pinch salt
3 egg yolks
1 tsp. vanilla
1 (9 inch) baked pie shell
Meringue or whipped cream (for topping)
In top of double boiler, scald milk with butter.
Blend together Ground Chocolate, sugar, cornstarch, salt. With wire whip, mix chocolate into hot milk. Stir constantly for 5 minutes or until filling begins to thicken.
Add a small amount of hot filling to egg yolks; pour yolks into filling. Continue cooking, stirring until thick enough to hold a shape. Add vanilla.
Pour into pie shell. Cover with plastic wrap touching surface to prevent film. Refrigerate.
Prepare meringue or use whipped cream for topping.
Makes 1 (9-inch) pie, 6 servings
