When I buy butternut squash I try to look for ones that have a more gradual curve/transition from the neck to the "bulb" at the base. This makes them easier to peel using a good (I like OXO) vegetable peeler. Also, you can cut butternut squash up first & peel the smaller pieces individually with veg peeler. You need a good strong chef's knife or even a cleaver. You can try to cut positioning knife on the squash &, putting your weight into it, push downward. Or be brave & bold & take a good whack at it from above. Don't be shy, and watch your fingers!
