Recipe(tried): Herb Garden Inspired Dishes....

Good Morning Everyone!

Early this summer I was inspired by my friend Burgundy to plant a herb garden. I planted parsley which grew into a beautiful bush and then got devoured by green caterpillers.

I had also planted tarragon, basil, chives, bay leaf, lemon balm, rosemary, marjoram, thyme,, cilantro, dill, and oregano. I have had plenty to share and use this summer as they all grew into beautiful bushes.

Tonight's dinner will make good use of the delicious and aromatic herbs in the garden...

Tropical Grilled Tuna Steaks
Tomatoes Caprese Salad
Julienned Carrots and Zucchini

Tropical Grilled Tuna

serves 2

2 freash tuna steaks
2 T. olive oil
2 T. fresh squeezed lemon juice
1 T. fresh chopped thyme
1 T. fresh chopped tarragon
1 T. fresh chopped oregano
1/4 t. herbs de Provence
1/2 t. lemon pepper
1/4 t. onion powder
1/2 t.minced garlic
1/2 t. ground coriander
1/4 c. coconut rum

Place tuna steaks in a glass container. Whisk all ingredients together in a small bowl and pour over the steaks, turning to coat well. Cover and refrigerate for 4 hours or overnight. Grill or broil 5-7 minutes on one side then turn over and grill for another 5 minutes, basting.

Julienned Carrots and Zucchini

2 carrots, washed and julienned
2 zucchinis, washed peeled and julienned
1 t. chopped marjoram
2 tblsp. butter
1/4 cup sugar
1/2 cup water

Melt the butter in the water and dissolve the sugar in it. Add the julienned veggies and marjoram and heat to medium until tender.

Tomatoes Caprese Salad

2 ripe red tomatoes
4 basil leaves, cut in long strips
1 ball buffalo mozzarella cheese
olive oil and balsamic vinegar
salt and pepper

Slice tomatoes and slice mozzarella. Layer alternately and sprinklea the basil over. Sprinkel with olive oil, vinegar, salat and pepper and let stand at room temperature for 1 hour covered.
