Hi,this is a great recipe. We love it. It is actually my Mom's recipe. My brothers love it so much she actually has to hide it from them because they will eat it frozen, and they are both grown men. Hope you try it. You bake it in a bundt or ring pan. It freezes great. And it is so nice and moist. It is great anytime of the year. Let me know what you think if you try it.

Holiday Ring Cake

1 c. butter
8oz cream cheese softened
1 1/2 c. granulated sugar
1 tsp. vanilla
2 tsp. grated lemon rind
4 eggs
2 c. all purpose flour
1 1/2 tsp. baking powder
1/2 c. seedles raisins
1/2 c. golden raisins
1/2 mixed fruit peel
1/2 c. well drained maraschino cherries, or candied cherries.
1/2 c. chopped nuts

With electric mixer, cream butter and cheese. Add sugar and cream well. Add eggs, one at a time, beating well after each addition. Sift 1 3/4 c. flour with baking powder add to batter and blend in. Combine fruit, nuts and toss with remaining flour. Stir into batter. Pour into greased floured bundt or tube pan (10 in.) Bake 300 deg. oven for 70 to 80 min. or until tester inserted in center comes out clean. Cool in pan for about 10 min. Then cool on rack. Dust cake when cool with icing sugar through a small sieve. Enjoy!
