Recipe(tried): hi sandi - here is an easy feta recipe - Tomato and Feta Salad

Tomato and Feta Salad
Balsamic vinegar
olive oil
fresh and juicy tomato
fresh herbs - i like basil and oregano

A couple of hours before serving, slice tomatoes or use cherry or grape tomatoes.
Drizzle a little olive oil over to coat, and a little good quality balsamic vinegar. Sprinkle with fresh herbs. About every half hour stir so the tomatoes steep in the marinade. Before serving, drain and crumble feta over all. I keep this at room temp.
If you like onions, sliced tomatoes and sliced onions work nicely in this salad.

I might suggest Gina's grecian chicken recipe as well.
