Recipe(tried): Homemade Brown Bread

I don't know exactly what you are looking for, but here is a yeast recipe for Brown Bread that I have made several times. All my recipes for Boston Brown Bread are quick bread, not yeast bread.

Homemade Brown Bread

Amount Measure Ingredient -- Preparation Method

1 1/2 cups boiling water
1 cup old-fashioned oats
2 tablespoons shortening
2 teaspoons salt
1 (1/4oz) pkg active dry yeast
3/4 cup warm water -- (110-115 degrees)
1/2 teaspoon sugar
1/4 cup packed brown sugar
1/4 cup molasses
4 3/4 to 5-1/4 cup all-purpose flour
melted butter or margarine

In a bowl, combine the first 4 ingred. Cool to 110-115 degrees. In a mixing bowl, dissolve yeast in warm water. Sprinkle with sugar. Add oat mixture, brown sugar, molasses and 3 cups flour; mix well. Add enough remaining flour to form soft dough. Turn onto floured surface and knead 6-8 min. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hr. Punch dough down. Divide in half; shape into loaves. Place in 2 greased 9x5x3" loaf pans. Cover and let rise until doubled, about 30-45 min. Bake at 375 degrees for 30-35 min.or until golden brown. Remove from pans; cool on wire racks. Brush with butter.

NOTES : 3/4 cups boiling water
1/2 c oats
1 tbl shortening
1 tsp salt
1-1/8 tsp yeast
3/8 c warm water
1/4 tsp sugar
2 tbl brown sugar
2 tbl molasses
about 2-1/2 c flour
I adapted the above for the bread machine
