Recipe: Homemade Butterscotch Pudding

BUTTERSCOTCH PUDDING
"This butterscotch pudding is also delicious when put in a pre-cooked pie shell or graham crust and topped with whipped cream."

In a saucepan mix together very thoroughly:
1 cup brown sugar
2 tablespoons cornstarch
3 tablespoons flour
1/2 teaspoon salt
2 eggs

Add:
2 cups warm milk
Cook over medium hat, boiling for 3 minutes or until thickened.

Remove from heat and add:
2 tablespoons butter
1 teaspoon vanilla

Pour into a dish or into a baked (9-inch) pie shell and cover with plastic wrap to prevent a skin from forming as it cools.

Tip: Put into individual serving containers or pre-cooked tart shells to send in lunches.
