Recipe: Three-Layer Mold and Pineapple Cream Cheese Mold (3-Layers of Jello)

FOR THE CHERRY LAYER:
1 (3 oz.) pkg. cherry-flavored gelatin
1 cup boiling water
1 (16 1/2 oz.) can pitted dark sweet cherries, undrained
FOR THE LEMON LAYER:
1 (3 oz.) pkg. lemon-flavored gelatin
1 cup boiling water
1 (3 oz.) pkg. cream cheese, softened
1 cup milk
FOR THE LIME LAYER:
1 (3 oz.) pkg. lime-flavored gelatin
1 cup boiling water
1 (20 oz.) can crushed pineapple, undrained
TO MAKE THE CHERRY LAYER:
Dissolve cherry gelatin in 1 cup boiling water. Add cherries, and pour into a lightly oiled 10-cup mold. Chill until set.
TO MAKE THE LEMON LAYER:
Dissolve lemon gelatin in 1 cup boiling water; set aside.
Beat cream cheese with electric mixer; add milk, and mix well. Add lemon gelatin to cream cheese mixture, mixing well. Spoon over cherry layer; chill until set.
TO MAKE THE LIME LAYER:
Dissolve lime gelatin in 1 cup boiling water. Chill until the consistency of unbeaten egg white. Stir in pineapple. Spoon mixture over lemon layer; chill until firm.
Servings: 16-18
PINEAPPLE CREAM CHEESE MOLD
FOR THE LIME LAYER:
1 (3 oz.) pkg. lime Jello
FOR THE CREAM CHEESE LAYER:
1 (3 oz.) pkg. lemon Jello
1 (8 oz.) pkg. cream cheese
1 cup miniature marshmallows (optional)
1 (20 oz.) can crushed pineapple, drained well, save juice
FOR THE RED JELLO LAYER:
1 (3 oz.) pkg. strawberry Jello
TO PREPARE THE LIME LAYER:
Mix lime Jello as directed on package. Pour into large flat casserole or Pyrex baking dish. Put in refrigerator and chill until set.
TO PREPARE THE CREAM CHEESE LAYER:
Put lemon Jello in mixing bowl, add 1 cup boiling water, stir until dissolved. Add cream cheese and marshmallows. Stir until almost melted.
Put reserved pineapple juice in 1 cup measure and add enough cold water to fill cup. Add this and pineapple to cheese mixture. Set in refrigerator to partly set.
When lime Jello is set, stir the lemon jello mixture and pour on top of the lime layer. Put in refrigerator to set.
TO PREPARE THE RED JELLO LAYER:
Mix red Jello according to package and refrigerate.
When cream cheese mixture is half set and when red Jello is half set, pour the red Jello over cream cheese mixture and refrigerate until all is set before serving.
