Homemade Chicken Salad for 25
Into pressure cooker place the following:
3 1/2 pound fresh chicken (skinned, cut-up into serving pieces)
1 onion (diced)
1 carrot (diced)
1 celery stalk (diced)
1 teaspoon dried Italian seasonings, freshy crushed
1/2 stick butter
2 cups water
Cover, bring to jiggle, reduce heat, cook until done (about 20 minutes).
Let cool, debone, drain, reserve liquid stock for soup.
Into large stainless bowl combine the following:
1 large bunch celery (trimmed and diced) -less one stalk
3 large eggs (hard-boiled,shelled-diced)
1 pint Duke's mayonnaise
1 cup Cates's sweet pickel relish
Juice from 2-3 large lemons (at least 2 ounces)
Add deboned chicken. Mix well.
Add: Salt to taste
Fresh ground pepper to taste
Yield 2+ quarts homemade chicken salad.
Will spread generously over 6 Kaiser rolls and 4 hoagie rolls with about another cup of salad left over. Spread soft butter over inside of rolls before adding salad, will seal so bread doesn't get soggy.
Made salads about 8 hours before picnic. Sandwiches a couple of hours before picnic.
Made these for a group picnic covered dish item this past Sunday.
I wrapped sandwich halves individually in sandwich foil, chilled in refrigrator.
Also made 2 quarts potato salad and did 5 deviled eggs(chilled)
Placed all in cooler with a bag of ice in bottom of cooler.
Took to picnic. All who tried loved sandwiches. Left sandwiches in cooler to serve. Stayed cold the whole time.
Did not use vinegar in recipe since celery will soak up the vinegar taste.
The celery adds a nice crunch. The large Kaiser rolls have about 250 calories without filling so I cut them in half for serving. Besides I couldn't wrap them in the foil squares whole.
