Recipe: Grilled Teriyaki Chicken Salad

GRILLED TERIYAKI CHICKEN SALAD

3 boneless skinless chicken breasts (about 1 pound)
1/2 cup prepared teriyaki sauce / marinade
4 cups lettuce, torn
1 (11-oz.) can mandarin oranges, drained
1 apple, diced
1/4 cup golden raisins
1/2 cup carrots, sliced
1 tomato, chopped
1/2 cup red bell pepper, sliced
1/4 cup low-fat ginger dressing

Cut each chicken breast crosswise in half. Marinate chicken in teriyaki sauce 20 minutes.

Preheat grill or grill pan. Grill chicken 6 minutes or until golden brown, turning once.

While chicken is cooking, toss remaining ingredients in a bowl.

Arrange 1 cup salad mixture on each of 6 plates. Top with sliced grilled chicken.

Serves: 6
