You can dry the noodles and store in a zip-lock bag in the pantry, but you have to be sure that the noodles are very dry before storing them this way - much will depend on the thickness of the pasta, humidity, etc. It's hard to say exactly how long they'll keep on the shelf - I've seen some charts recommend 2 months and others up to 6 months, I would use the shorter amount of time and watch for any moisture in the bag or mold forming on the noodles after storing. If you dehydrate the noodles they will keep longer on the shelf. You can store homemade noodles or pasta in the refrigerator for use within 2-3 days. You can freeze them for use in 2-3 months.
