Recipe(tried): Noodle Dough
Misc.This is the recipe my family has used for generations. I hope it comes out well for you. You can also use the dough to make fried cookies--you cut it into wider strips, pinch in the middle like a bow tie, and deep fry; drain and shake them in a paper bag with powdered sugar. I also cut them in circles and stuff them with ground meat, onions, salt, and pepper and then boil them and serve them with browned butter.
Noodle Dough
1 egg
1 egg of water
enough flour to make the dough as soft as a baby's bottom
Mix the egg and water together. Stir, then knead in the flour until you have a soft dough. Roll out to desired thickness and cut into noodles. You can either dry them out, store them in the fridge, or use them right away by putting them in boiling water or soup.
Notes: An egg of water is basically an equal amount of water to the size of the egg. I usually fill the shell with water rather than measure the egg. My mother has told me that it is about 1 cup of flour, but I think it ends up being more. You want to add enough flour so that the dough is soft, but not stickey.
