BEEF STROGANOFF
1/4 cup all purpose flour
1/2 tsp salt
1/8 tsp pepper
2 1/2 lb beef sirloin steak, cut into 3x1/2 inch strips
1/4 cup oil or shortening
10 1/2oz can condensed beef broth
1/2 cup water
3 tbsp tomato juice
1 tbsp worchestershire sauce
2 tsp prepared mustard
1 1/2 cups dairy sour cream
Hot cooked rice or noodles
In plastic bag, combine flour, salt and pepper. Add beef; shake to coat. In large skillet, heat oil. Add meat, cooking until browned; drain.
Add beef broth, water, tomato juice, worchestershire sauce and mustard; mix well. Cover,, simmer for 20 to 30 minutes or until meat is tender.
Stir in sour cream; heat thoroughly. Do not boil.
Serve over hot cooked rice or noodles.
Makes 8 servings.
