Recipe: HOMINY STUFFING

HOMINY STUFFING

1 1/2 c. diced celery
6 oz. diced onion
1/4 medium diced bell pepper
1/4 c. margarine
1 1/2 chicken broth packets
4 1/2 c. cooked hominy grits
3 slices whole wheat bread,
cubed
1/2 c. water
3/4 tsp. poultry seasoning
1/2 tsp. salt
1/4 tsp. garlic powder
1/8 tsp. pepper

Preheat oven to 450 degrees. Combine celery, onion, bell
pepper, margarine and chicken broth. Bake in 2 1/2 quart
casserole pan for 8 to 10 minutes or until onion is transpar-
ent. Remove dish from oven. Add remaining ingredients, stir
to combine. Return to oven, bake about 30 minutes or until
golden brown. Serves 6.
