Recipe: Honey Dip for Dried Fruits - re: sulfuring fruits

It is possible to do, and you can get a publication from your county extension office on this. It is a long complicated process and potentially dangerous to do. Some people are highly allergic to the sulfur compounds, especially anyone with asthma or breathing problems. They should not work with the sulfur or eat the fruits dried with sulfur or sulfites. Sulfites can be used in liquid solution and you find them at wine making shops.

Fruits can be dried at home with a honey dip or use a vitamin C or ascorbic acid dip with good results. Even using apple juice, pineapple juice, etc. makes a nice final dried fruit.

Honey Dip
You can use 1 part honey to 4 parts water, dip and allow to soak for 5 minutes before dehydrating. Fruits dipped in liquid will take longer to dry than just plain fruits.
