Recipe: Four Grain Peach Muffins (using cornmeal, oat bran and raisins)

FOUR GRAIN PEACH MUFFINS

3 fresh peaches, diced (1 2/3 cups), divided use
1/2 cup low fat milk
1/2 cup canola or vegetable oil
1/2 cup packed brown sugar
1 egg
3/4 cup flour
3/4 cup yellow cornmeal
1/2 cup buckwheat flour or whole wheat flour
1/2 cup oat bran
1 tbsp. baking powder
1/4 cup raisins

Preheat oven to 375 degrees F. Coat muffin pan with cooking spray.

Set aside 3/4 cup peaches for garnish.

In large bowl, beat remaining peaches, milk, oil, sugar and egg until sugar is dissolved. Set aside.

In medium bowl, combine dry ingredients; stir in raisins. Stir into peach mixture until just combined. Divide batter evenly among muffin cups. Lightly press 1 tablespoon reserved chopped peaches into top of each muffin.

Bake for 25 minutes or until toothpick inserted in center comes out clean. Remove from oven and let cool 5 minutes. Remove to wire rack to cool completely.

Makes 12 muffins
