Recipe(tried): Honeymooners' Casseroles

Hi Gale;
These casseroles are very good. The recipe makes two 8 oz. casseroles, but I
have increased the amounts and made more than two. It makes very nice
individual casseroles. From Better Homes and Gardens Favorite Recipes from
Country Inns and Bed and Breakfasts.
HONEYMOONERS'CASSEROLES
1 1/2 cups refrigerated or frozen loose pack hash brown potatoes
1/2 cup shredded monterey jack cheese with jalapeno peppers
1/2 cup diced fully cooked ham
1/2 cup shredded swiss cheese
2 beaten eggs
1/2 cup light cream or 1/2&1/2
Thaw potatoes if frozen. Then press the potatoes between paper towels to remove
excess moisture.
Grease two 8 oz. casseroles. Arrange potatoes evenly in bottoms of casseroles.
Bake uncovered in 400* oven for 20 mins. Remove from oven and let stand 10
mins. to cool slightly. Reduce oven to 350* On top of the potatoes, layer jack
cheese, ham and swiss cheese. In a small mixing bowl combine the eggs and
cream. Pour egg mixture over potato and cheese mixture in casseroles. Bake
uncovered at 350* for about 25 mins. or till centers appear set.
Let stand about 5 mins. before serving.
These are served to honeymoon couples at the Park Row Bed and Breakfast, located 66 miles southwest of Minneapolis
