Hot Bacon Dressing
1 egg, beaten
1/3 cup sugar
1/4 cup cider vinegar
1/4 cup water
8 slices bacon, cut finely
dash salt
big dash pepper
Fry bacon in skillet until well done. Meanwhile, beat
egg with sugar, then add water and cider vinegar. Add
salt and pepper, beat well. When bacon is finished,
keep bacon and drippings in the pan, and add the
liquid ingredients. Cook, stirring constantly, for a
minute or two until thick. Pour over lettuce, or spinach.
Also, good with green beans. Keep the dressing in the
skillet, and add one quart of well drained green beans.
Heat over medium heat until beans are hot. Enjoy!!

Sheila, Only the greens are used when making
dandelion with a hot bacon dressing. Here is a hot
bacon dressing recipe i copied years ago from a
Lancaster newspaper.
Berks county Hot Bacon dressing
8 slices bacon or more
1 cup sugar
2 Tbsp. cornstarch
1 tsp. salt
2 eggs beaten
2 cups water
1/2 cup vinegar
Fry bacon, drain and crumble. In top of double boiler
stir together the sugar, salt and cornstarch place over
water in bottom of double boiler Add beaten egg and
vinegar mixing well,add water, some of the bacon fat
may also be added as well. Cook over medium heat
untill thickened, Serve on dendelion or lettuce. We Pa.
dutch people like to put the danelion into the hot
dressing and allow it to wilt and then eat it over potatos
fried from raw not cooked potatoes, or some eat it over
boiled potatoes. This is an early spring dish. and the
dandelion is not as bitter before it blooms as it is latter
on. I hope this will be helpful, This recipe is a fairly
sweet recipe but some people like it more sour. We
especially like this recipe. Enjoy

Hot Bacon Dressing with Zinfandel
8 oz. bacon slices
Olive oil
1/2 cup red Zinfandel wine
1/4 cup Dijon mustard
Cook bacon until crisp. Drain. Pour pan drippings into
measuring cup; add olive oil if necessary to measure
1/2 cup. Return drippings and oil to skillet and heat for
1 minute. Whisk wine and mustard in small bowl.
Gradually whisk in 1/2 cup hot bacon drippings into the
wine and mustard. Season to taste with pepper.
Crumble bacon over salad, spoon warm dressing over
and serve.
