Recipe(tried): How to Cook Blue Crab

An old friend of mine, who is now deceased, showed me a way to have blue crabs that once you have tried them, I think few will return to the traditional approach. The key step is to pull the shell off the crab while it is alive, quickly remove the gills, break off the eyes and mouthparts and hose out (with a water hose) all the yellow fat. I know this sounds cruel, but if done quickly it is very humane. Place the cleaned crabs in a steam pot, seasoning each layer with Old Bay seasoning. Try to get quite a bit of seasoning inside the cleaned crab. I like to steam them with water with a bay leaf added and a little vinegar. Cook only until done. Check by watching the crabs turn red and then test one by cooling it under a faucet. The picked meat is snow white with no "off" taste. I promise this will spoil you if you like blue crabs. Otherwise drink lots of beer and the fat and trash inside the crab won't bother you!!!!
