WHITE SAUSAGE GRAVY
From Your Cast Iron Skillet
1/3 pound pork sausage
1/4 cup all-purpose flour
2 cups milk or half-and-half
1/2 teaspoon salt
1/2 teaspoon white pepper
In a cast iron skillet over medium heat, fry the sausage, breaking it into small pieces. When the sausage is no longer pink, add the flour and stir till mixed. The oil from the sausage must absorb all the flour. Add oil if needed. Whisk in the milk, S & P. When the milk comes to a boil, cook 1 minute or till the mixture resembles pancake batter. If the gravy is not thick, continue to cook over low heat for 4 - 15 minutes, stirring every few minutes. Remove from the heat and reheat just before serving. If the gravy gets too thick, add milk.
To serve, split a biscuit, turn it center-side down on a warm plate and cover with gravy. Serve with sausage, fried potatoes, eggs and orange juice. Serve beside sunnyside fried eggs and mix the two together as you eat. Later in the day, at lunch or dinner, serve over Southern Fried Chicken, Country Fried Steak or Ham Biscuits.
