Recipe: How to Make Homemade Egg Pasta for Cristy
Recipe CollectionsHow to Make Homemade Egg Pasta
Fresh egg noodles are great with a rich alfredo sauce. This recipe makes enough pasta for four people.
1 tbsp. olive (not virgin) oil
1 tsp. salt
3 eggs
2 1/2 c. all-purpose flour
measuring spoons
measuring cups
Sift the flour into a mound on a countertop or board, or, if it's more comfortable for you, into a large bowl.
Make a well in the center of the flour.
Add eggs, salt, and olive oil to the well.
Mix liquid and flour together with fingers.
Knead pasta dough until it is elastic. Let stand for one hour.
Flour table and rolling pin, and roll out dough to a very thin sheet, flouring surface liberally.
Roll the sheet up into a roll, like a jelly roll.
Cut 1/4-inch to 1/2-inch slices from the roll.
Unroll the strips and hang to dry. Hang on clean broom handle or over a towel on stair rails.
Dry pasta for at least 10 to 15 minutes before using. For best results, dry for two hours.
Tips:
You can use a pasta machine to make the noodles more uniform in shape and simplify the rolling and cutting.
