Recipe: How to Roast a Turkey Half

How to Roast Half a Turkey

The roasting of 1/2 of a turkey is a common practice, so please follow these directions:

Place wedges of one medium onion and one lemon in the cavity of the turkey half. Follow the guidelines for roasting a turkey the weight of the turkey half. Using the open pan method, the turkey should be placed on a rack in a shallow roasting pan and placed in a preheated 325 degree F oven. Use a food thermometer to make sure the turkey reaches an internal temperature of 170 degrees F in the breast and 180 degrees F in the thigh.

Turkey Roasting Chart:
UNSTUFFED
4 to 6 lbs. breast - 1 1/2 to 2 1/4 hrs.
6 to 8 lbs. breast - 2 1/4 to 3 1/4 hrs.
8 to 12 lbs - 2 3/4 to 3 hrs.
12 to 14 lbs. - 3 to 3 3/4 hrs.
14 to 18 lbs. - 3 3/4 to 4 1/4 hrs.
18 to 20 lbs. - 4 1/4 to 4 1/2 hrs.
20 to 24 lbs. - 4 1/2 to 5 hrs.
