Recipe: How to Store Sweet Corn

Harvest sweet corn when kernels are plump and tender. Silks will be dry and kernels filled. Check a few ears for maturity: Open top of ear and press a few kernels with thumbnail. If milky juice exudes, it is ready for harvest. Harvest at peak of quality, husk to conserve space, and store in plastic bags for no more than two days in the refrigerator. The new super sweet varieties will store for a week or more. Freeze or can surplus corn. Baby corn may be harvested just as silks emerge, before the ear is 3 inches long.

Choose fresh sweet corn ears with filled-out, smooth kernels and a minimum of blemishes. Refrigerate tray-packed sweet corn just as it is, in the package. If the husks are still on, remove them and wrap the ears well before chilling.

More Tips
Fresh sweet corn keeps extremely well when stored properly. Be aware of these handling facts:

Ears should be filled with smooth kernels - dents in the kernels mean the corn is past its prime.

Refrigerate sweet corn immediately after taking it home.

To keep sweet corn its freshest at home, remove the husks and place the ears in plastic bags before chilling.

When refrigerated, fresh sweet corn will stay fresh for about four days.
