Recipe(tried): Husband say's I should bottle this dressing!

My DH just started the shift at work that begins with working 8 days straight. They are long days so it means I will need to send two meals with him almost every day. As this is only day 3 of the 14 day phase on the South Beach Diet, I am in the kitchen trying to be creative. Rather than stick to the sample menus I have been using foods from the acceptable list and tweaking some of the recipes in the book. For one meal yesterday I sent homemade broccoli/cheese soup with roasted red pepper puree and a HUGE salad with every vegetable allowed (except califlower, which he is not fond of). He loves French or Catalina dressing but we haven't found a low sugar variety whih is the only type allowed. We just need to scour the grocery shelves but living so far from town that's not happening soon. On the South Beach you are allowed olive oil so I mixed up a simple balsamic vinegar/olive oil dressing consisiting of olive oil, balsamic vinegar, chopped garlic, & salt and pepper. Then I remembered the sample menus called for having tomato or V-8 juice at breakfast. I dumped some V-8 into the dressing and sent it with him. He came home to say I should bottle it, that it was wonderful and everyone that came into the lunch room asked him what smelled so good. Today he took pork tenderloin stir-fry with yellow and orange bell peppers, onions, garlic and a splash of light soy sauce.(soy beans are allowed and aside from water that's all that is in the light variety I have, regular soy sauce would have added sugar). For his other meal I sent a tomato stuffed w/ lowfat cottage cheese and lettuce,fat free blogona and low fat cheese rollups. If anyone else out there is on the South Beach Diet and has come up with ideas, we would love to hear them.
