Recipe: Ice Cream Ducklings

Desserts - Frozen
ICE CREAM DUCKLINGS

1 quart French vanilla ice cream (or lemon sherbet)
Chocolate chips (or raisins)
Orange gumdrops
Dried apricots (or orange fruit leather)

For each duckling's body, place a large scoop of French vanilla ice cream or lemon sherbet on top of a flattened paper-cupcake liner.

Create a neck by topping the body with a spoonful of ice cream and using the bowl of a spoon to flatten it slightly. Place a small scoop of ice cream on the neck for a head. Freeze till firm.

Press on chocolate chips or raisins for eyes and a flattened orange gumdrop (cut into 2 pieces) for a beak.

Finally, cut webbed feet out of fruit leather or dried apricots. Decorate the ducklings and return them to the freezer until serving time.
